For size stuff, I'w 6'3" 200 pounds. not fat, athletically built. I got an XL and it fits great. The size charts have some grey area mostly in my size range. And there is a surprise on the inside pocket that really says how dedicated this company is to their customers.

I am new to motorcycle jackets. What is the difference in protection and comfort between textile and mesh jackets?

mesh is mesh, there is no fabric for abrasion protection. textile has fabric made for crashing in and will protect you a lot more than the mesh. pick a jacket that has CE armor in the shoulders, elbows and back.

I could remove the shoulder protectors - but how do I remove the elbow protectors?

Do not remove any of the ARMOR.
